Attached is a report made possible through grant funding by the USDA Local Foods Promotion Program in February 2016. It is a great resource for learning about the planning and design of a physical food hub as well as a discussion about the challenges and hurdles that they faced during implementation, including the abandonment of the original frozen food processing kitchen idea.
According to the report, "This report is written for local food organizations, project developers, and food system builders. It is at once a case study in launching a particular kind of food hub; a set of lessons learned around small food processing enterprises; and a call to embrace risk and not shy from failure.
